Coconut Curry Mussels (๑'ᵕ'๑)⸝*

the first recipe ill be sharing is
a mussel recipe that can be messed around with a little...

it's pretty easy, it took us about 20 minutes max to put it
together and cook it, although, me and my grandfather have already
cooked mussels before this in a white wine sauce...

some recipes i'll be sharing in the future:
- salmon sushi bake (the sunny way (๑>؂•̀๑)!)
- gumbo 
- bucatini carbonara
- another mussel recipe (mussels in a white wine garlic sauce)
- and hopefully kimchi fried rice!!!

my grandfather is a pretty diverse cook, and everything
always tastes good!!!

recipe starts here:

2 lbs mussels
1 cup beer *
2 cups coconut milk *
2 1/2 tbsp curry powder or 1-2 squares paste
4 cloves garlic (minced)
1 shallot (minced)
1/4 tsp salt
freshly ground black pepper
1 tsp basil
1 tsp adobo seasoning
1 tsp oregano
1/2 paprika
1/2 thyme
1 large tomato (diced) *
3 tbsp chopped parsley
1 tbsp chopped shado beni (culantro)
4 scallions 
1/3 scotch bonnet pepper *
2 tbsp olive oil

*beer is optional, we did not use beer. if you use beer, use
only 1 cup (so 1 cup beer, 1 cup coconut milk)
* tomato is optional, we had without tomato (because im very picky)
* scotch bonnet pepper optional (we did not use it)

directions:

put olive oil in the pan under med/low heat...once heated, add garlic, scallion, and shallot for 3 min. add coconut milk, then add the curry powder (with salt, ground pepper, basil, adobo, oregano, paprika and thyme all in one little mixture), add shado beni/culantro. (this is where you add the tomato, if wanted.) return to simmer. *add cornstarch slurry if you want the sauce to be thicker.
add mussels- cover pot and turn up the heat. cook 5-8 minutes or until the mussels have opened.

꒰ 🥥 ꒱ؘ ࿐ ࿔*:・゚and bam!!! once you got your sauce done and your mussels open,
you've got a nice and delicious (and somewhat easy) dinner!!! 

mussels, if you haven't tried them, are a much more mild flavor. they
don't taste or have the slimey consistency of oysters, so you don't 
have to worry about that!!! they basically take on the flavor of whatever
sauce you make.

i recommend trying this with some homemade bread if you can! we made
homemade bread, almost like a crunchy flatbread and it was super good.
