Kimchi & Spam Fried Rice

୧ ‧₊˚🧄 ⋅ ☆  welcome! time for an awesome kimchi and spam fried rice recipe!

now, if you've been keeping up, i've been very 
excited to try this recipe. i've been waiting ever since my grandfather
showed me that he wanted to make it!!!

some recipes i'll be sharing in the future:
- gumbo 
- bucatini carbonara
- another mussel recipe (mussels in a white wine garlic sauce)

this requires a wok, so i recommend doing it with one!
so, as a heads up, these will be wok-based directions,
however if you'd like, you can substitute it for a large skillet.

this is a pretty tedious dish, however,
i would recommend getting your
ingredients all set up and ready! (i.e. chopping up,setting aside,
getting bowls ready, etc.)

we played around a bit with the recipe,
and what not, like always..! 

it was amazing, so i really do think
if you have the time, that you should make this!!!


recipe starts here:

ingredients:

- 2 cups cooked white rice (day old)
- 3/4 pound kimchi with juices (about 1 cup packed)
- 2 tablespoons canola oil (this will be divided as a heads up!)
- 1 12 oz can of Spam, cut into 1/4-1/2 in. dice (basically just dice it up!)
- 1 large onion (we used 1/2) finely diced 
- 4 scallions, white and pale green parts only!!! thinly sliced (about 1/4 cup)
- 3 medium cloves garlic, minced (we used half the garlic)
- 2 tsp fish sauce
- 1 tsp toasted sesame oil
- 1/2 cup chopped fresh cilantro leaves and fine stems
*- 2 scrambled eggs (we added it into the rice straight up, instead of scrambling them separately, which we should've done, however, i personally liked it like this!)
- hot chili oil (for serving)

*usually this recipe calls for a fried egg on top, however, me and my grandfather preferred scrambled

directions:

if you're using day old rice, transfer to a bowl and break the rice up!!!
place kimchi in fine-mesh stainer that's set over a large bowl and squeeze out excess liquid. reserve this liquid, and finely chop your kimchi.

chop or cube spam, and chop scallions.

heat 1/2 tbsp oil in a wok over med-high heat. once its heated, add spam and cook, toss and stir frequently, until well browned and starting to crisp!!!

add chopped kimchi (we used mild kimchi), onion, and scallions; stirring and tossing frequently, until fragrant and veggies are softened (about 4ish minutes)
transfer into bowl, and set aside

add another 1/2 tbsp of oil to wok. increase the heat to high; add HALF of the rice and cook, stirring and tossing frequently. (ours stuck to the wok, so we had to clean the wok after D: ) do this for about 3 minutes, until a bit toasted. transfer into a bowl, repeat with another 1/2 tbsp of oil and remaining rice.

return all rice to the wok and press it up against the sides, leaving a space in the middle. add 1/2 tbsp oil to the middle. add garlic, stir and cook until softened and fragrant, about 1 minute. toss with rice to combine. add onion/scallion, kimchi and spam micture and toss to combine. add scrambled egg (or wait to top with fried egg), pour in reserved kimchi juice (slowly). add fish sauce, sesame oil, and cilantro (reserving some for garnish)...toss everything to combine. season to taste (we didn't need to!)
when ready, allow rice to sit in wok without tossing for about 45 seconds to create a crisp crust.

i garnished it with some hot chili oil, and it was THE BOMB!!!

definitely a 100/10 from me...
